Give the animals a break! Vegetarian diets are kind to animals, good for the environment and even better for your health. Even by having one vegetarian meal a day, or one vegetarian day a week, you are making a difference.
My take on one of my favorite Indian dishes, Aloo Gobi. I cooked up Potatoes and Cauliflower with spices, diced tomatoes, onions & peas. It was super filling & very flavorful!
I always find myself grabbing an avocado or two when I see them grocery shopping. I look forward to them, and one day I find them ripe. More times than not, I’ll make some guacamole! With great guacomole, comes great tex-mex vegetables. You can fill these in a burrito, a taco, but better yet… a fajita salad!
