Butternut Squash with Baby Spinach
This is one of my favorite ways to make butternut squash. It’s a warm salad. It is from Wegmans, our great local supermarket. Their recipes call for using their brands of all of the ingredients. You don’t need to get anything prepackaged. The basting oil can be olive oil or grapeseed, with garlic added.
Vegan Green Bean Casserole
This is a great replacement for the traditional Thanksgiving casserole made with cream of mushroom soup. It is a bit more work but well worth it!

Aloo Gobi
My take on one of my favorite Indian dishes, Aloo Gobi. I cooked up Potatoes and Cauliflower with spices, diced tomatoes, onions & peas. It was super filling & very flavorful!
Fajita Vegetable salad with guacamole
I always find myself grabbing an avocado or two when I see them grocery shopping. I look forward to them, and one day I find them ripe. More times than not, I’ll make some guacamole! With great guacomole, comes great tex-mex vegetables. You can fill these in a burrito, a taco, but better yet… a fajita salad!

This is one of my favorite dishes to make with whatever veggies I have around the house. It’s really easy to make, and you can season it to your taste!
